Background: Despite the high consumption of seaweed in Asian countries, there are limited epidemiological studies on the relationship between seaweed intake and human health. Therefore, the purpose of this study was to evaluate the relationship between seaweed intake and the risk of diabetes among Koreans.
Methodology:We followed 7,470 adults, aged 40 to 69 years, from the Korean Genome and Epidemiology Study: Ansan and Ansung Study. Seaweed intake was estimated from a semi-food frequency questionnaire consisting of 103 food items (including laver, kelp/sea mustard). Cox proportional hazard models were used to estimate association between seaweed intake and incidence of diabetes.
Results:During the 12-year follow-up, 1,433 incident cases of diabetes occurred. In stepwise multivariable adjusted Cox-proportional hazard model, the highest seaweed intake group (Q4) was associated with decreased risk of diabetes compared with the lowest (Q1) group (HR=0.80, 95% CI=0.69-0.96, p-trend=0.04).
Conclusion:It was suggested that seaweed intake may play a significant role in lowering the risk of diabetes.
